Caramel-Filled Chocolate Cookies

Delicate pastry wraps chewy caramel and chocolate in this winning cookie.

Ingredients

2 1/2 cups flour Pillsbury BEST® All Purpose or Unbleached Flour
3/4 cup unsweetened cocoa
1 teaspoon baking soda
1 cup sugar
1 cup firmly packed brown sugar
1 cup margarine or butter, softened
2 teaspoons vanilla
2 eggs
1 cup chopped pecans
48 Rolo® Chewy Caramels in Milk Chocolate, unwrapped (from 13-oz. pkg.)
1 tablespoon sugar
4 oz. vanilla-flavored candy coating, if desired

Steps

  • 1  In medium bowl, combine flour, cocoa and baking soda; mix well.
  • 2  In large bowl, combine 1 cup sugar, brown sugar and margarine; beat until light and fluffy. Add vanilla and eggs; beat well. Add flour mixture; blend well. Stir in 1/2 cup of the pecans. If necessary, cover with plastic wrap; refrigerate 30 minutes for easier handling.
  • 3  Heat oven to 375°F. For each cookie, with floured hands, shape about 1 tablespoon dough around 1 caramel candy, covering completely.
  • 4  In small bowl, combine remaining 1/2 cup pecans and 1 tablespoon sugar. Press one side of each ball into pecan mixture. Place, nut side up, 2 inches apart on ungreased cookie sheets.
  • 5  Bake at 375°F. for 7 to 10 minutes or until set and slightly cracked. Cool 2 minutes; remove from cookie sheets. Cool on wire rack for 15 minutes or until completely cooled.
  • 6  Melt candy coating in small saucepan over low heat, stirring constantly until smooth. Drizzle over cookies.

Oh yes, it’s a fowl, fowl day – Poultry Day, that is!
Poultry Day takes place on March 19, 2015. Chicken, turkey and other birds we commonly consume are celebrated on this day. Poultry is a category of domesticated birds kept by humans for the purpose of collecting their eggs, or killing for their meat and/or feathers. Poultry is the second most widely eaten meat in the world, accounting for about 30% of meat production worldwide, after pork at 38%.
Chicken meat contains about two to three times as much polyunsaturated fat as most types of red meat when measured by weight. A 100g serving of baked chicken breast contains 4 grams of fat and 31 grams of protein, compared to 10 grams of fat and 27 grams of protein for the same portion of broiled, lean skirt steak.

Swallows Return to San Juan Capistrano Day

Mission San Juan Capistrano, the 7th of 21 missions in what was known as Alta California, is often called as the “jewel of the missions.” While it’s known for its beautiful courtyards and lush landscaping, it’s also famous for its birds – swallows, to be exact.
The swallows that make their homes in the nooks and crannies of the mission buildings are said to migrate annually to Argentina in October, and return to their spring and summer home in San Juan Capistrano in March. Each year, on March 19, the mission marks a double celebration: the traditional feast of St. Joseph, and the return of the swallows.
The significance of the swallows dates back centuries ago, as legend has it, when a local innkeeper destroyed the mud nests of local swallows, and the swallows soon took refuge in the mission buildings. Mission padres observed that the migrating birds’ return roughly coincided with St. Joseph’s Day on the church calendar, March 19.
The return-of-the-swallows celebration has achieved international prominence since then – and even inspired a hit song in the 1940s, “When the Swallows Come Back to Capistrano.”

The union of chocolate and caramel is arguably one of the greatest flavor combinations ever conceived by man. These two ingredients appear in countless candy bars, ice cream flavors, confections, and desserts.
Did you know that Milton Hershey began his career at a caramel company? In the late 1800s he began experimenting with ways to improve caramel candy and found some German-built machines for manufacturing chocolate. His attention would eventually shift completely to chocolate, but Hershey’s first product was a chocolate-covered caramel!
