How about a sweet treat for you and/or your family?

Ice Cream Tacos

Ingredients

  • 1/2 cup packed light brown sugar
  • 1/3 cup butter, melted
  • 1/4 cup honey
  • 3/4 cup all-purpose flour
  • 3 quarts Vanilla and/or chocolate ice cream
  • 1 cup MOUNDS Sweetened Coconut Flakes, tinted*
  • REESE’S MINI PIECES Candy or REESE’S PIECES Candy(optional)
  • HERSHEY’S MINIATURES Chocolate Bars, cut into curls or chopped**(optional)

    Directions

    1. Heat oven to 350°F. Line cookie sheet with foil; grease foil. Foil-wrap several cardboard rolls from plastic wrap, foil, or paper towels

    2. Beat brown sugar, melted butter, honey and flour in medium bowl until smooth. Drop batter by level tablespoonfuls, alternating 4 cookies per prepared cookie sheet. With back of spoon, spread each scoop of batter to make 3-inch circle.

    3. Bake cookies 5 to 6 minutes or until bubbly and deep golden brown. Let stand 2 minutes until set; remove from foil. With flat side to inside, place cookies around prepared rolls; cool completely. Repeat until all cookies are baked and cooled.

    4. Fill cookies with scoops of ice cream; sprinkle with tinted coconut, candies and chocolate curls. Serve immediately. About 14 servings.

    *To tint coconut: Place 1/2 teaspoon water and several drops green food color in small bowl; stir in coconut. With fork, toss until evenly tinted; cover tightly.

    ** To make chocolate curls: Unwrap chocolate bars; hold in hand until softened. With vegetable peeler, peel down side of chocolate piece, forming curls. Place on wax paper-covered tray; refrigerate until firm. Handle curls with wooden picks.

    April is Autism Awareness Month, and April 2 is World Autism Day. These observances offer the opportunity to highlight the increasing number of children identified with autism spectrum disorder (ASD) and the substantial burden on families and health, educational and other support services, as well as an opportunity to celebrate the unique perspectives of those living with ASD.
    ASD is a developmental disability that can cause major social, communication, and behavioral challenges. Signs of ASD begin during early childhood and usually last throughout a person’s life. The cause of most cases of ASD is unknown, and there is currently no cure. Centers for Disease Control and Prevention’s most recent surveillance data indicate that about one in 68 children has been identified with ASD, which represents an almost 30% increase since the previous estimate in 2012.

For us, you see, having autism is normal—so we can’t know for sure what your ‘normal’ is even like.     Sexual Assault Awareness Month

    In April 2015 Sexual Assault Awareness Month is celebrated. Each year during the month of April, state, territory, tribal and community-based organizations, rape crisis centers, government agencies, businesses, campuses and individuals plan events and activities to highlight sexual violence as a public health, human rights and social justice issue and reinforce the need for prevention efforts.
    Sexual assault is any involuntary sexual act in which a person is threatened, coerced, or forced to engage against their will, or any sexual touching of a person who has not consented. This includes rape, groping, forced kissing, child sexual abuse, or the torture of the victim in a sexual manner
    State, territory, and tribal sexual violence coalitions were polled in 2000 by the Resource Sharing Project and the NSVRC to determine that the color teal was the preferred color for sexual assault awareness and prevention and that April was the preferred month to coordinate national sexual assault awareness activities. The teal ribbon was adopted as a symbol of sexual assault awareness and prevention.

    April Fools’ Day or All Fools’ Day is a day celebrated in many countries on April 1. The day is marked by the commission of hoaxes and other practical jokes of varying sophistication on friends, family members, enemies, and neighbors, or sending them on a fool’s errand, the aim of which is to embarrass the gullible. Traditionally, in some countries, such as the UK, Australia and South Africa the jokes only last until noon, and someone who plays a trick after noon is called an “April Fool”. Elsewhere, such as in Canada, France, Ireland, Italy, Russia, The Netherlands, and the U.S., the jokes last all day.
    The origin of April Fools’ Day is obscure. One likely theory is that the modern holiday was first celebrated soon after the adoption of the Gregorian calendar; the term referred to someone still adhering to the Julian Calendar, which it replaced. In many pre-Christian cultures May Day (May 1) was celebrated as the first day of summer, and signalled the start of the spring planting season. An April Fool may have been someone who did this prematurely. Another possible origin lies in the fact that when King Charles IX of France officially changed the first day of the year from April 1 to January 1, some of his subjects continued using the old system.
    In the eighteenth century the festival was often posited as going back to the time of Noah. According to an English newspaper article published April 13, 1789, the day had its origin when Noah sent his dove off too early, before the waters had receded; he did this on the first day of the Hebrew month that corresponds with April. A possible reference to April Fools’ Day can be seen in the Canterbury Tales (ca 1400) in the Nun’s Priest’s tale, a tale of two fools (Chanticleer and the fox), which took place on March 32.

    Fossil fuels are fuels formed by natural processes such as anaerobic decomposition of buried dead organisms. The age of the organisms and their resulting fossil fuels is typically millions of years, and sometimes exceeds 650 million years. Fossil fuels contain high percentages of carbon and include coal, petroleum, and natural gas.
    Fossil fuels are non-renewable resources because they take millions of years to form, and reserves are being depleted much faster than new ones are being made. The production and use of fossil fuels raise environmental concerns. A global movement toward the generation of renewable energy is therefore under way to help meet increased energy needs.

    Annually celebrated on April 1, it is National Sourdough Bread Day. “Sourdough is a bread product made by a long fermentation of dough using naturally occurring lactobacilli and yeasts. In comparison with breads made quickly with cultivated yeast, it usually has a mildly sour taste because of the lactic acid produced by the lactobacilli.”
    Most likely the first form of leavening available to bakers, sourdough likely originated in Ancient Egyptian times around 1500 BC.  It did remain the usual form of leavening into the European Middle Ages. During the California Gold Rush, sourdough was the main bread made in Northern California and is still a part of the culture of San Francisco today.  The bread was so common at that time that “sourdough” became a nickname for the gold prospectors. In The Yukon and Alaska, a “sourdough” is also a nickname given to someone who has spent an entire winter north of the Arctic Circle and it refers to their tradition of protecting their Sourdough during the coldest months by keeping it close to their body. The sourdough tradition was also carried into Alaska and western Canadian territories during the Klondike Gold Rush.
    San Francisco sourdough is the most famous sourdough bread made in the U.S. today.  In contrast to sourdough production in other areas of the country, the San Francisco variety has remained in continuous production since 1849, with some bakeries able to trace their starters back to California’s Gold Rush period. Many restaurant chains keep it as a menu staple. Sourdough bread is a great side to your soup or stew or toasted with your morning cereal.
